This was SO easy and SO delicious. I made mini muffins and cooked them for 7 minutes and they came out perfect!. Not a nutmeg fan so I just used 2 tsp of cinnamon instead of one. These muffins are like banana bread muffins. Bake for minutes, uncovered, until a toothpick inserted into the center comes out clean or with a few moist crumbs attached. Allow bread to cool in the pan, on a wire rack for about 20 minutes before removing to a wire rack to cool completely. Carefully peel away the wax paper before slicing. Just the name of this soup is intriguing, Sarah! This sounds like a perfect way to put them to use! This soup looks incredible! I love the sweet potato and apple flavors and wish I had a big bowl for dinner! Apples and sweet potatoes belong together, but in creamy, dreamy soup form?!
